Why is there price gouging for Pesach? Particularly, why does the price of chicken go up just before Pesach when there is only one source of chicken?

If we don't eat chametz all of Shabbat, by using kneidlach or something similar for our 2-3 meals, are we in any way transgressing "Bal Tosiph" for the extra day that we abstain from Chametz?

My family and I don't eat meat, as is the case for our guests. Do we really need a shankbone on our seder plate? (We do eat fish)

When is the chometz sold to the goy, and what is included in the sale? If I decide on Friday afternoon or on Shabbos before the zman to take something from the pantry and eat it, am I stealing from the goy, or is it automatically not included in the sale? Or perhaps does the contract specify that the sale will not take effect until Shabbos morning?

Many brands of dog and cat food contain wheat, but not as the main ingredient; the main ingredient is meat and "meat products" of various kinds, and the grain is far less than 50%. Also, dog and cat foods are never eaten by normal people. Am I correct in understanding that it is therefore permitted to own them on Pesach, and to feed them to my pets?
